Delicious 3-ingredient coconut truffles that are easy to make and melt in your mouth.


Ingredients

  • 1 can (14 ounces) of sweetened condensed milk
  • 2 cups of shredded coconut (unsweetened)
  • 8 ounces of dark or semi-sweet chocolate (finely chopped)

Instructions

  1. In a large mixing bowl, combine the sweetened condensed milk and shredded coconut. Mix well until the ingredients are fully combined.
  2. Place the mixture in the refrigerator for about 30 minutes to firm up.
  3. Once the mixture has chilled and is firm enough to handle, use your hands to shape it into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
  4. In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring in between, until it is completely smooth and melted.
  5. Using a fork or a dipping tool, dip each coconut ball into the melted chocolate, making sure it is fully coated. Allow any excess chocolate to drip off, and then place the coated truffle back on the parchment-lined baking sheet.
  6. Repeat the dipping process until all the coconut balls are coated in chocolate.
  7. Once all the truffles are coated, place the baking sheet in the refrigerator for about 1 hour to allow the chocolate to set.
  8. After the truffles have chilled and the chocolate is set, they are ready to be enjoyed. Serve them as is or store them in an airtight container in the refrigerator for up to a week.

Notes

  • For a variation, you can use milk chocolate instead of dark or semi-sweet chocolate.
  • You can also roll the truffles in crushed nuts or cocoa powder after dipping in chocolate for added flavor.
