Ingredients

- 2 ripe avocados, diced
- 2 ripe mangoes, diced
- 1 small red onion, thinly sliced
- 1 red bell pepper, diced
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, finely chopped (optional)
- 1 cup cherry tomatoes, halved
- 3 tbsp fresh lime juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Dice avocados and mangoes; slice red onion; chop bell pepper, cilantro, and jalapeño (if using); halve cherry tomatoes.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
- In a large mixing bowl, gently toss all salad ingredients together.
- Drizzle lime dressing over the salad and toss gently to coat evenly.
- Serve immediately on its own or over mixed greens.
Notes
- For added heat, leave the seeds in the jalapeño.
- This salad is best served fresh, but can be stored in the refrigerator for a few hours before serving.
