Ingredients

  • 2 ripe avocados, diced
  • 2 ripe mangoes, diced
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, finely chopped (optional)
  • 1 cup cherry tomatoes, halved
  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Dice avocados and mangoes; slice red onion; chop bell pepper, cilantro, and jalapeño (if using); halve cherry tomatoes.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
  3. In a large mixing bowl, gently toss all salad ingredients together.
  4. Drizzle lime dressing over the salad and toss gently to coat evenly.
  5. Serve immediately on its own or over mixed greens.

Notes

  • For added heat, leave the seeds in the jalapeño.
