Ingredients

  • 1 cup crumbled feta cheese
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub a seasoning mixture of oregano, garlic powder, onion powder, salt, and pepper onto both sides of the chicken breasts.
  3. Sear seasoned chicken breasts in olive oil in an oven-safe skillet until golden brown.
  4. Bake the chicken in the skillet for 15-20 minutes until cooked through.
  5. Whisk together olive oil, lemon juice, Dijon mustard, red wine vinegar, and honey to make the vinaigrette.
  6. Sprinkle crumbled feta cheese over the chicken and broil for 2-3 minutes until feta is crispy.
  7. Let the chicken rest, drizzle vinaigrette over it, garnish with parsley, and serve.
