- 4 boneless, skinless chicken breasts
- 1 cup crumbled feta cheese
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Rub a seasoning mixture of oregano, garlic powder, onion powder, salt, and pepper onto both sides of the chicken breasts.
- Sear seasoned chicken breasts in olive oil in an oven-safe skillet until golden brown.
- Bake the chicken in the skillet for 15-20 minutes until cooked through.
- Whisk together olive oil, lemon juice, Dijon mustard, red wine vinegar, and honey to make the vinaigrette.
- Sprinkle crumbled feta cheese over the chicken and broil for 2-3 minutes until feta is crispy.
- Let the chicken rest, drizzle vinaigrette over it, garnish with parsley, and serve.
