Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×13-inch pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and salt in a bowl.
  3. Add melted butter and mix until it resembles wet sand.
  4. Press mixture into the bottom of the pan.
  5. Bake for 10 minutes, then let cool while preparing the filling.
  6. Beat cream cheese until smooth.
  7. Add sugar and beat until combined.
  8. Stir in mashed bananas.
  9. Add eggs one at a time, mixing gently.
  10. Mix in sour cream and vanilla.
  11. Add flour and cinnamon; mix just until combined.
  12. Pour filling over crust. Tap pan to release air bubbles.
  13. Bake at 325°F for 35-40 minutes, until center is just set.
  14. Turn off oven, crack the door, and let bars cool inside for 1 hour.
  15. Cool completely at room temperature, then refrigerate for at least 4 hours.
  16. Whip cream with powdered sugar and vanilla until stiff peaks form.
  17. Spread whipped cream over chilled bars.
  18. Top with banana slices and vanilla wafer cookies.
  19. Slice and serve.
