A delicious and easy-to-make Basil Pesto Tomato Mozzarella Chicken Bake, perfect for a weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup basil pesto
  • 2 medium tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tbsp olive oil
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. Season chicken breasts with salt and pepper on both sides. Place them in the prepared baking dish.
  3. Spread 2 tablespoons of basil pesto over each chicken breast.
  4. Layer tomato slices on top of the pesto.
  5. Sprinkle mozzarella cheese evenly over the tomatoes. Add Parmesan cheese if using.
  6. Bake uncovered for 25–30 minutes, or until the chicken is fully cooked (internal temp 165°F) and cheese is melted and bubbly.
  7. Garnish with fresh basil leaves and serve warm.
