- Wrap brisket in butcher’s paper with apple cider vinegar and beef tallow, then increase smoker temperature to 250°F until reaching 204°F.
- Let brisket rest in a cooler for 2-3 hours.
- Sauté diced onions in avocado oil with kosher salt and butter until caramelized.
- Assemble your melts by layering fried onions, cheeses, brisket slices, BBQ sauce between slices of sourdough bread.
- Toast in a cast iron skillet over medium heat until golden brown on both sides.
