Description

A delicious and nutritious beef and sweet potato power bowl packed with flavors and healthy ingredients.


Ingredients

  • 2 medium-sized Sweet Potatoes
  • 1 lb Beef Sirloin or Steak
  • 1 Avocado
  • 1 cup Black Beans (canned)
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 Red Onion
  • 12 Bell Peppers (various colors)
  • 2 tablespoons Olive Oil
  • Spices: ½ teaspoon Chili Powder, ½ teaspoon Cumin, ½ teaspoon Paprika, ¼ teaspoon Garlic Powder, ¼ teaspoon Onion Powder, Salt, Black Pepper to taste
  • Juice of 1 Lime
  • Fresh Cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dice the sweet potatoes into roughly ½-inch cubes.
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil and spices, then spread in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway through.
  3. While the sweet potatoes are roasting, cut the beef into strips and toss with 1 tablespoon olive oil and spices.
  4. Heat a skillet over medium-high heat and cook the seasoned beef for 3-5 minutes until browned and done to your liking.
  5. Prepare other vegetables by dicing onions and bell peppers, and preparing corn and black beans.
  6. Optionally, sauté onions and peppers in olive oil for 5-7 minutes until softened.
  7. Assemble your power bowls by dividing the roasted sweet potatoes, beef, black beans, corn, onions, bell peppers, and avocado among bowls.
  8. Squeeze lime juice over each bowl, garnish with cilantro, and add any desired extras like salsa or Greek yogurt.
  9. Serve immediately and enjoy!

Notes

  • For a vegetarian option, replace the beef with additional black beans or tofu.
  • This dish can be easily customized with other vegetables.
  • Store leftovers separately in the refrigerator for up to 2 days.
