- 1 cup almond milk (or any milk of choice)
- 1/4 cup chia seeds
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- Pinch of salt
Instructions
- In a mixing bowl, add almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt.
- Mix all the ingredients well until the chia seeds are evenly distributed throughout the liquid.
- Allow the mixture to sit for about 5-10 minutes. This will help the chia seeds start absorbing liquid and expand.
- After the brief resting period, whisk the mixture again to avoid clumping of the chia seeds.
- Pour the mixture into an airtight container or individual cups, and cover them with a lid. Place them in the refrigerator.
- Let the pudding chill for a minimum of 2 hours, though overnight is ideal for the best texture.
- While the pudding is chilling, wash and slice the mixed berries for topping.
- Once the pudding has set, give it a good stir before serving. Top it with fresh berries and a drizzle of honey, if desired.
Notes
- Feel free to use any milk of choice for a different flavor.
- For added sweetness, you can adjust the amount of maple syrup or honey to taste.
