Description

A refreshing and nutritious berry chia seed pudding that is easy to prepare and perfect for breakfast or a sweet treat.


Ingredients

  • 1 cup almond milk (or any milk of choice)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • Pinch of salt

Instructions

  1. In a mixing bowl, add almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt.
  2. Mix all the ingredients well until the chia seeds are evenly distributed throughout the liquid.
  3. Allow the mixture to sit for about 5-10 minutes. This will help the chia seeds start absorbing liquid and expand.
  4. After the brief resting period, whisk the mixture again to avoid clumping of the chia seeds.
  5. Pour the mixture into an airtight container or individual cups, and cover them with a lid. Place them in the refrigerator.
  6. Let the pudding chill for a minimum of 2 hours, though overnight is ideal for the best texture.
  7. While the pudding is chilling, wash and slice the mixed berries for topping.
  8. Once the pudding has set, give it a good stir before serving. Top it with fresh berries and a drizzle of honey, if desired.
