Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 12 tbsp heavy cream (optional)
  • 1/4 cup graham cracker crumbs
  • Fresh mint leaves (optional)
  • Extra small strawberries (optional)

Instructions

  1. Wash strawberries and pat dry. Cut off the tops to create a flat base, and gently hollow out the centers.
  2. In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth and fluffy. Add heavy cream if needed to loosen.
  3. Transfer filling into a piping bag with a star tip (or ziplock bag with snipped corner).
  4. Pipe cheesecake filling into each strawberry.
  5. Sprinkle with graham cracker crumbs.
  6. Garnish with mint leaves and small strawberries if desired.
  7. Chill for 30 minutes before serving.
