Ingredients

  • 1 cup butterscotch chips (use less if desired)
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  2. In a large bowl, using an electric mixer at medium speed, beat together the butter and sugars until smooth and well mixed.
  3. Add the egg and vanilla, mixing on low speed until incorporated.
  4. Add the flour, baking soda, and salt, mixing until just incorporated. Do not overmix.
  5. Add butterscotch chips, chocolate chips, and any optional add-ins, mixing until just combined.
  6. Using a small or large ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking sheets, spacing 6 to 8 per pan.
  7. Optionally, add some butterscotch and chocolate chips to the tops of the cookies before baking.
  8. Bake the cookies, one sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched.
  9. For medium-sized cookies (2 tablespoons of dough), bake for 8-10 minutes; for large cookies (1/4 cup of dough), bake for 10-13 minutes.
  10. Let the cookies cool for 5 minutes on the baking sheets, then transfer to wire racks to cool completely. Sprinkle sea salt on cookies while they cool.
