- ½ cup butter (straight from fridge or room temperature)
- ¼ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour (measured correctly)
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- 1 cup butterscotch chips (use less if desired)
- 1 cup chocolate chips
- Sea salt sprinkles (for topping)
- Optional: walnuts
Instructions
- Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
- In a large bowl, using an electric mixer at medium speed, beat together the butter and sugars until smooth and well mixed.
- Add the egg and vanilla, mixing on low speed until incorporated.
- Add the flour, baking soda, and salt, mixing until just incorporated. Do not overmix.
- Add butterscotch chips, chocolate chips, and any optional add-ins, mixing until just combined.
- Using a small or large ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking sheets, spacing 6 to 8 per pan.
- Optionally, add some butterscotch and chocolate chips to the tops of the cookies before baking.
- Bake the cookies, one sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched.
- For medium-sized cookies (2 tablespoons of dough), bake for 8-10 minutes; for large cookies (1/4 cup of dough), bake for 10-13 minutes.
- Let the cookies cool for 5 minutes on the baking sheets, then transfer to wire racks to cool completely. Sprinkle sea salt on cookies while they cool.

- Makes 12-30 cookies depending on size.
- Adjust the amount of butterscotch chips based on your sweetness preference.
- For a crunchy texture, add walnuts.
