Ingredients

  • 3 large (100 grams) egg whites
  • ¼ cup (50 grams) granulated sugar
  • Sprinkles as needed
  • 4 tablespoons (56 grams) unsalted butter, softened
  • 3 tablespoons yellow cake mix
  • 1 cup (113 grams) powdered sugar
  • 1 tablespoon heavy cream or milk

Instructions

  1. Line a cookie sheet with a silicone mat or parchment paper.
  2. Pulse the powdered sugar and almond flour in a food processor until combined and sift into a large bowl.
  3. Prepare the french meringue by beating egg whites on low speed, gradually adding granulated sugar until stiff peaks form. Add food coloring if desired.
  4. Gently fold the meringue into the dry ingredients until combined, being careful not to over-mix.
  5. Transfer the batter to a piping bag and pipe 1-inch disks onto the silicone mat.
  6. Tap the cookie sheet to remove air bubbles and sprinkle with sprinkles if desired.
  7. Allow macarons to rest for an hour until tops are dry to the touch.
  8. Preheat the oven to 280°F (140°C).
  9. Bake macarons for a total of 15 minutes, rotating the pan midway through.
  10. Cool completely on the cookie sheet before removing.
  11. For the buttercream, beat softened butter until creamy, then add cake mix and half the powdered sugar, beating until combined.
  12. Add remaining powdered sugar and beat on medium speed for 5-6 minutes. Adjust consistency with heavy cream as needed.
  13. Assemble by piping frosting onto one macaron shell and topping with another.
