Indulge in this creamy blackberry cheesecake, rich with the flavor of fresh blackberries and a buttery graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- 2 cups fresh blackberries
- 1/4 cup blackberry preserves
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and set aside.
- In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Bake in the preheated oven for 10 minutes, then remove and let cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar and the vanilla extract, mixing until well combined.
- Add the eggs one at a time, beating well after each addition. Stir in the sour cream until the mixture is smooth and creamy.
- Pour half of the cream cheese mixture over the cooled crust. Sprinkle half of the blackberries evenly over the batter. Repeat with the remaining batter and blackberries.
- In a small saucepan, heat the blackberry preserves over low heat until melted. Drizzle the melted preserves over the top of the cheesecake.
- Place the cheesecake in the oven and bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
- Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight, to set completely.
- Before serving, run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the springform pan and slice the cheesecake into portions. Serve chilled and enjoy!
Notes
- For best results, use room temperature cream cheese for easier mixing.
- Adjust the sweetness of the cheesecake by adding more or less sugar according to taste.
- Garnish with additional blackberries for presentation if desired.
