  • 1 cup chicken broth
  • 1 lb gnocchi (store-bought or homemade)
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season diced chicken with Cajun seasoning, salt, and pepper. Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes).
  3. Reduce heat to low. Add heavy cream and chicken broth to the skillet, stirring to combine. Bring to a simmer.
  4. Stir in spinach and diced tomatoes. Cook for about 2-3 minutes, until spinach is wilted.
  5. Add cooked gnocchi to the skillet, tossing to coat in the sauce. Stir in grated Parmesan cheese until melted and creamy.
  6. Plate Cajun chicken gnocchi and garnish with fresh parsley if desired.
