- 1 lb chicken breast, diced
- 1 tablespoon Cajun seasoning (or to taste)
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 lb gnocchi (store-bought or homemade)
- 1 cup spinach (fresh or frozen)
- 1/2 cup diced tomatoes (canned or fresh)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season diced chicken with Cajun seasoning, salt, and pepper. Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes).
- Reduce heat to low. Add heavy cream and chicken broth to the skillet, stirring to combine. Bring to a simmer.
- Stir in spinach and diced tomatoes. Cook for about 2-3 minutes, until spinach is wilted.
- Add cooked gnocchi to the skillet, tossing to coat in the sauce. Stir in grated Parmesan cheese until melted and creamy.
- Plate Cajun chicken gnocchi and garnish with fresh parsley if desired.
Notes
- Adjust Cajun seasoning to your spice preference.
- This recipe can be made with either fresh or frozen spinach.
- Use store-bought gnocchi for a quicker preparation.
