Ingredients
Scale
- 2 boneless, skinless chicken breasts, diced

- 1/2 medium onion, sliced
- 2 teaspoons Cajun seasoning blend
- 1 tablespoon olive oil
- 2 cups cooked rice
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and sprinkle with Cajun seasoning. Sauté for 5–7 minutes, turning occasionally, until chicken is evenly seared and cooked through.

- Divide cooked rice among plates. Spoon the chicken and vegetable mixture over rice, then garnish with fresh parsley before serving.
Notes
- For extra spice, consider adding some sliced jalapeños or a dash of hot sauce.
- You can substitute the chicken with shrimp or tofu for a different protein option.
- Feel free to use any colorful bell peppers for a more visually appealing dish.
