- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 8 ounces fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
- In a bowl, toss potatoes with 1 tablespoon olive oil, garlic powder, Italian seasoning, salt, and pepper. Spread on one side of the pan.
- Rub chicken breasts with remaining olive oil and season with salt and pepper. Place on the other side of the pan.
- Bake for 25-30 minutes, or until chicken is cooked through (165°F) and potatoes are golden and tender.
- Remove from oven, top each chicken breast with mozzarella slices and cherry tomatoes. Return to oven for 5 more minutes, or until cheese is melted.
- Garnish with fresh basil and drizzle with balsamic glaze before serving.

- Ensure chicken reaches an internal temperature of 165°F for safety.
- Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
