Ingredients

  • 1 medium cauliflower
  • 1/2 English cucumber (or 2 small cucumbers), ends trimmed
  • 1 large or 2 medium cloves garlic, pressed
  • 3 tbsp mayonnaise
  • 3 tbsp ranch dressing
  • 1 to 1 1/2 cups cherry or grape tomatoes

Instructions

  1. Start by chopping the cauliflower into small pieces, about 1/4″ to 1/2″ in size, and place them into a large mixing bowl.
  2. Slice the cucumbers and cut the tomatoes into halves or quarters. Add them to the cauliflower in the bowl.
  3. Press the garlic over the chopped vegetables.
  4. In a separate bowl, mix together the mayonnaise and ranch dressing until well combined.
  5. Pour the dressing over the salad and toss everything together to coat the vegetables evenly.
  6. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
