Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and sugar.
  3. Add Butter: Cut the cold butter into cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.
  4. Mix in Cheese: Stir in the shredded cheddar cheese until evenly distributed.
  5. Add Buttermilk: Gradually pour in the buttermilk, mixing gently with a spoon until a dough forms.
  6. Shape and Bake: Turn the dough onto a floured surface, gently knead it a few times, and then pat it into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet and bake for 12-15 minutes or until golden brown on top. Set aside to cool slightly.
  7. Prepare the Lobster: If not using pre-cooked lobster, steam or boil the lobster tails. Once cooked, remove the meat and chop it into bite-sized pieces.
  8. Prepare the Salad: In a bowl, combine the chopped lobster, mayonnaise, lemon juice, Dijon mustard, parsley, and celery. Stir until well combined. Season with salt and pepper to taste.
