- 2 chicken breasts
- Salt and pepper
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 cheese slices
- 4 bread slices
- 2 tablespoons mayo
- 1 tablespoon Dijon mustard
- 1 small red onion, sliced
- 1 tomato, sliced
- Butter for grilling
Instructions
- Season chicken with salt and pepper. Cook in olive oil for 6-7 minutes per side until done. Rest before slicing thin.
- Slice avocado, onion, and tomato. Get cheese ready.
- Spread bread with mayo and Dijon mustard. Layer chicken, avocado, cheese, onion, and tomato on top.
- Heat pan with butter. Cook sandwiches for 3-4 minutes on each side until golden and cheese melts, pressing gently with a spatula.
- Let cool slightly, cut in half, and serve warm.
