Ingredients

  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 cheese slices
  • 4 bread slices
  • 2 tablespoons mayo
  • 1 tablespoon Dijon mustard
  • 1 small red onion, sliced
  • 1 tomato, sliced
  • Butter for grilling

Instructions

  1. Season chicken with salt and pepper. Cook in olive oil for 6-7 minutes per side until done. Rest before slicing thin.
  2. Slice avocado, onion, and tomato. Get cheese ready.
  3. Spread bread with mayo and Dijon mustard. Layer chicken, avocado, cheese, onion, and tomato on top.
  4. Heat pan with butter. Cook sandwiches for 3-4 minutes on each side until golden and cheese melts, pressing gently with a spatula.
  5. Let cool slightly, cut in half, and serve warm.
