- 1 1/2 cups cooked rice
- 1 cup romaine lettuce, chopped
- 1/4 cup Caesar dressing
- 1/2 cup crispy rice cereal
- 1/4 cup parmesan cheese, grated
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Once the olive oil is hot, sprinkle in the garlic powder, black pepper, and salt, stirring to combine.
- Add the cooked rice to the skillet, stirring occasionally until it becomes slightly crispy, about 4-5 minutes.
- Remove the skillet from the heat and set the crispy rice aside to cool for a few minutes.
- In a large mixing bowl, add the shredded cooked chicken.
- Add the chopped romaine lettuce to the bowl with the chicken.
- Pour the Caesar dressing into the bowl with the chicken and lettuce, then toss everything together until evenly coated.
- Once the crispy rice has cooled slightly, add it to the bowl with the chicken, lettuce, and Caesar dressing.
- Toss the salad gently to combine, ensuring the crispy rice is distributed evenly throughout.
- Sprinkle the grated parmesan cheese over the top of the salad.
- Serve immediately and enjoy!
