Ingredients

- 1 medium zucchini sliced into half-moons
- 1 pint cherry tomatoes halved
- 1 small onion finely chopped
- 8 ounces chicken sausages sliced into 1-inch pieces
- 8 ounces pasta any short pasta shape
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add chicken sausages and cook until browned, about 5-7 minutes.
- Stir in zucchini, tomatoes, and oregano. Cook until vegetables are tender-crisp, about 5-7 minutes.
- Add cooked pasta to the skillet and toss to combine.
- Serve immediately.

- Feel free to add other vegetables based on your preference.
