A delightful blend of chicken cooked in a savory garlic sauce and served with creamy Parmesan rice.
Ingredients

- 1 lb chicken breast, cut into strips
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- 2 tbsp lemon juice
- 3 tbsp butter
- 1/4 tsp red pepper flakes
- 1/4 cup chopped parsley
- 1 cup long-grain white rice
- 2 cups water
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender. Stir in Parmesan cheese and set aside.
- Season chicken strips with salt and pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-6 minutes. Remove and set aside.
- In the same skillet, add remaining 1 tbsp olive oil and minced garlic. Sauté for 1 minute until fragrant. Add chicken broth, white wine (if using), lemon juice, butter, and red pepper flakes. Simmer for 2-3 minutes until slightly reduced.
- Return the chicken to the skillet and toss to coat in the sauce. Cook for 1-2 minutes to heat through. Stir in chopped parsley.
- Plate the garlic Parmesan rice and top with the chicken scampi. Garnish with additional parsley if desired. Enjoy!

- For a lighter version, you can skip the butter.
- This dish can be paired with a side salad for a complete meal.
