Chicken Scampi with Garlic Parmesan Rice Will Delight You!

Description

A delightful blend of chicken cooked in a savory garlic sauce and served with creamy Parmesan rice.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 2 tbsp lemon juice
  • 3 tbsp butter
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped parsley
  • 1 cup long-grain white rice
  • 2 cups water
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender. Stir in Parmesan cheese and set aside.
  2. Season chicken strips with salt and pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-6 minutes. Remove and set aside.
  3. In the same skillet, add remaining 1 tbsp olive oil and minced garlic. Sauté for 1 minute until fragrant. Add chicken broth, white wine (if using), lemon juice, butter, and red pepper flakes. Simmer for 2-3 minutes until slightly reduced.
  4. Return the chicken to the skillet and toss to coat in the sauce. Cook for 1-2 minutes to heat through. Stir in chopped parsley.
  5. Plate the garlic Parmesan rice and top with the chicken scampi. Garnish with additional parsley if desired. Enjoy!

Notes

  • For a lighter version, you can skip the butter.
  • This dish can be paired with a side salad for a complete meal.
