Ingredients

  • 1 ¾ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 cup boiling water
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup molasses
  • 1 teaspoon ground cinnamon
  • 24 tablespoons milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
  3. In a large mixing bowl, combine the granulated sugar and vegetable oil. Beat in the eggs, one at a time, followed by the vanilla extract. Mix until thoroughly incorporated.
  4. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the whole milk. Begin and end with the dry ingredients, mixing just until combined. Lastly, stir in the boiling water until the batter is smooth.
  5. Pour equal amounts of the batter into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, followed by the molasses and cinnamon. Mix until combined, adding milk as necessary to achieve your desired frosting consistency.
  7. Once the cakes are completely cool, place one layer on a serving plate and spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
