  • 2 tbsp cocoa powder (15g)
  • 3 large egg whites (90g) at room temperature
  • 1/4 cup granulated sugar (50g)
  • 4 oz dark chocolate (113g), chopped
  • 1/2 cup heavy cream (120ml)

Instructions

  1. Preheat oven to 300°F (150°C) and prepare two baking sheets with parchment paper.
  2. In a bowl, whisk together almond flour, icing sugar, and cocoa powder until combined. Sift to eliminate lumps.
  3. Whip egg whites in a clean bowl until foamy. Gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold the dry mixture into the meringue until fully combined.
  5. Transfer batter to a piping bag and pipe small circles on prepared sheets, about an inch apart.
  6. Tap sheets firmly to release air bubbles and let rest for 30 minutes.
  7. Bake for 15-20 minutes until feet form and shells are firm. Cool completely before removing from parchment.
  8. For the filling, heat dark chocolate with heavy cream until melted and smooth. Let cool slightly before spreading between two shells.
