  • 2 and 1/4 teaspoons active dry yeast (one packet)
  • 1/4 cup granulated sugar
  • 3 and 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 large egg, at room temperature
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons milk or cream, as needed
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 cup chopped peanut butter cups
  • 1/4 cup chopped roasted peanuts (optional)

Instructions

  1. In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
  2. Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Lightly grease a clean bowl. Place the dough in the bowl, cover, and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. Prepare the peanut butter filling by whisking together the peanut butter, powdered sugar, and salt. Gradually add milk or cream until smooth.
  6. Once the dough has risen, punch it down and turn it out onto a floured surface. Roll the dough to 1/2 inch thick and cut out donut shapes.
  7. Transfer the cut donuts to a baking sheet, cover, and let them rise for another 30-45 minutes until puffed.
  8. Heat vegetable oil in a large pot to 350-375°F. Fry the donuts for 1-2 minutes per side until golden brown.
  9. Remove the fried donuts and let them drain on a wire rack.
  10. To make the chocolate glaze, combine chocolate chips and heavy cream in a bowl and microwave until smooth.
  11. Once cool, fill each donut with the peanut butter filling using a piping bag.
  12. Dip each filled donut into the chocolate glaze and sprinkle with chopped peanut butter cups and peanuts. Serve immediately.
