- 2 and 1/4 teaspoons active dry yeast (one packet)
- 1/4 cup granulated sugar
- 3 and 1/2 cups all-purpose flour, plus more for dusting

- 1/4 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract

- 1 cup creamy peanut butter

- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 cup chopped peanut butter cups
- 1/4 cup chopped roasted peanuts (optional)
Instructions
- In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
- Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- Lightly grease a clean bowl. Place the dough in the bowl, cover, and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
- Prepare the peanut butter filling by whisking together the peanut butter, powdered sugar, and salt. Gradually add milk or cream until smooth.
- Once the dough has risen, punch it down and turn it out onto a floured surface. Roll the dough to 1/2 inch thick and cut out donut shapes.
- Transfer the cut donuts to a baking sheet, cover, and let them rise for another 30-45 minutes until puffed.
- Heat vegetable oil in a large pot to 350-375°F. Fry the donuts for 1-2 minutes per side until golden brown.
- Remove the fried donuts and let them drain on a wire rack.
- To make the chocolate glaze, combine chocolate chips and heavy cream in a bowl and microwave until smooth.
- Once cool, fill each donut with the peanut butter filling using a piping bag.
- Dip each filled donut into the chocolate glaze and sprinkle with chopped peanut butter cups and peanuts. Serve immediately.
