Description
Classic Cowboy Casserole is a delicious one-dish meal combining ground beef, beans, corn, and topped with crispy tater tots and melted cheese.

- 1 lb ground beef
- 1 small onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1 package (28 oz) frozen tater tots
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
- Stir in the black beans, corn, cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Transfer the mixture to a 9×13-inch baking dish and spread it evenly.
- Sprinkle the shredded cheddar cheese over the top.
- Arrange the frozen tater tots in a single layer over the cheese.
- Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and the casserole is bubbly.
- Let cool for 5 minutes before serving.
Notes
- For a spicier version, add diced jalapeños.
- Can be made ahead and refrigerated before baking.
- Leftovers can be stored in the refrigerator for up to 3 days.
