Description

Classic Cowboy Casserole is a delicious one-dish meal combining ground beef, beans, corn, and topped with crispy tater tots and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 package (28 oz) frozen tater tots

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  3. Stir in the black beans, corn, cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Transfer the mixture to a 9×13-inch baking dish and spread it evenly.
  5. Sprinkle the shredded cheddar cheese over the top.
  6. Arrange the frozen tater tots in a single layer over the cheese.
  7. Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and the casserole is bubbly.
  8. Let cool for 5 minutes before serving.

Notes

  • For a spicier version, add diced jalapeños.
  • Can be made ahead and refrigerated before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days.
