Description

A delicious and refreshing pasta salad featuring dill pickles for a unique twist.


Ingredients

  • 8 oz pasta (shells or rotini)
  • 1 cup dill pickles, diced
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 tbsp Dijon mustard
  • ½ small red onion, finely diced
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in boiling salted water until al dente (8-10 minutes). Drain and cool.
  2. In a bowl, mix sour cream, mayonnaise, Dijon mustard, salt, and pepper until smooth.
  3. Dice dill pickles and red onion while pasta cools.
  4. In a large mixing bowl, combine cooled pasta with diced veggies and fresh dill.
  5. Pour dressing over the salad and gently fold until well-coated.
  6. Chill in the fridge for at least 30 minutes before serving.

Notes

  • For added flavor, let the salad chill longer if possible.
  • May substitute Greek yogurt for sour cream for a healthier option.
