Description

Coconut Macarons are delightful treats made with almond flour and shredded coconut, filled with a creamy coconut butter filling.


Ingredients

  • 1 3⁄4 cups powdered sugar
  • 3 large egg whites, room temperature
  • 1⁄4 cup granulated sugar
  • 1⁄2 cup shredded coconut (unsweetened)
  • 1 tsp coconut extract (optional)
  • A pinch of salt
  • 1⁄2 cup unsalted butter, softened
  • 1 1⁄2 cups powdered sugar (for filling)
  • 1 tsp coconut extract (for filling)
  • 2 tbsp coconut milk

Instructions

  1. Sift almond flour and powdered sugar together into a bowl. Mix in shredded coconut and set aside.
  2. In a clean, dry bowl, beat egg whites and salt until frothy. Gradually add granulated sugar and beat until stiff peaks form. Add coconut extract if using.
  3. Gently fold the dry ingredients into the meringue in three additions. Stop when the batter flows like lava and can form a figure-eight without breaking.
  4. Transfer the batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto a parchment-lined baking sheet. Tap the tray firmly on the counter to release air bubbles.
  5. Let the piped shells sit at room temperature for 30 minutes, or until a skin forms on the surface.
  6. Preheat the oven to 300°F (150°C). Bake the macarons for 12-15 minutes, rotating the tray halfway through. Let cool completely before removing from the tray.
  7. Beat butter until creamy, then gradually add powdered sugar, coconut extract, and coconut milk. Beat until smooth and fluffy.
  8. Pipe filling onto half the shells and sandwich with the remaining halves.

Notes

  • Make sure to use room temperature egg whites for better meringue.
  • Allow the macarons to cool completely before removing them from the baking sheet to prevent breakage.
  • Store macarons in an airtight container in the refrigerator for up to a week.
