Ingredients

  • 1 small onion, finely diced
  • 3 carrots, peeled and thinly sliced
  • 2 celery sticks, thinly sliced
  • 14 ounces canned corn, drained and rinsed
  • 14 ounces canned green beans, drained and rinsed
  • 3 Yukon gold potatoes, peeled and chopped
  • 2 pounds ground beef
  • 14 ounces canned diced tomatoes, with juice
  • 14 ounces canned diced tomatoes with green chilies
  • 14 ounces canned chili beans, with juice
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 1/2 teaspoons Kosher salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste
  • 4 cups beef broth
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large stock pot over medium-high heat. Add the diced onion, sliced carrots, and celery sticks. Cook until the vegetables soften and become tender, approximately 5 minutes.
  2. Add the ground beef to the pot with the sautéed vegetables. Cook and crumble the beef, stirring occasionally, until it is no longer pink.
  3. Stir in the minced garlic, cumin, chili powder, oregano, Kosher salt, and ground black pepper. Cook for an additional 1-2 minutes, allowing the spices to bloom and the garlic to become aromatic.
  4. Add the canned diced tomatoes, canned diced tomatoes with green chilies, chili beans, canned corn, green beans, and diced potatoes to the pot. Pour in the beef broth to cover the ingredients. Mix well.
  5. Bring the soup to a boil, then lower the heat to a simmer. Cover the pot and cook for approximately 15 minutes, or until the potatoes are tender. Stir occasionally to ensure even cooking.
  6. Once the soup is ready, garnish with freshly chopped cilantro or parsley. Serve hot, paired with rustic bread or your choice of sides. Enjoy!
