Ingredients

- 2 cups frozen sweet corn, thawed
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 cup red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a large mixing bowl, combine the thawed corn, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a separate small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth.
- Pour the dressing over the corn mixture and gently toss until everything is well coated.
- If using, fold in the chopped cilantro for added flavor.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For a lighter version, use Greek yogurt instead of sour cream.
- This salad can be customized with your favorite vegetables.
