Ingredients

  • 150 grams peeled shrimp (about 5.3 ounces)
  • 150 grams whole wheat pasta (about 5.3 ounces)
  • 2 garlic cloves, minced
  • 2 tablespoons light cream cheese
  • 120 milliliters chicken broth (about ½ cup)
  • 1 cup baby spinach leaves

Instructions

  1. Bring a large pot of salted water to a boil and cook whole wheat pasta according to package directions until al dente. Drain and set aside.
  2. Heat a large nonstick skillet over medium heat. Add shrimp and minced garlic; sauté until shrimp are just opaque, about 2–3 minutes. Remove shrimp from pan and reserve.
  3. In the same skillet, add light cream cheese and chicken broth. Whisk over medium heat until cream cheese is melted and the sauce is smooth.
  4. Return cooked shrimp to the pan along with drained pasta and baby spinach. Toss gently until spinach wilts and everything is evenly coated in sauce.
  5. Divide pasta between plates and serve immediately, garnished with fresh cracked pepper if desired.

Notes

  • For a spicier version, consider adding red pepper flakes.
  • This dish can be made with low-sodium chicken broth.
  • Feel free to substitute shrimp with chicken or tofu for different variations.
