- 2 Boneless, skinless chicken breasts
- 2 tbsp Olive oil
- 1 Diced onion
- 2 cloves Minced garlic
- 1/2 cup Sliced jalapeños
- 1 cup Chicken broth
- 1/2 cup Heavy cream
- 1 cup Shredded cheddar cheese
- 1 tsp Paprika
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and paprika. Cook chicken for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add diced onion and sliced jalapeños. Sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
- Pour chicken broth into the skillet and bring to a simmer. Stir in heavy cream and cook for 2-3 minutes until sauce thickens slightly.
- Stir in shredded cheddar cheese until melted and sauce is smooth and creamy.
- Return cooked chicken to the skillet, coating in the creamy jalapeño sauce. Sprinkle fresh chopped cilantro on top.
Notes
- Adjust the number of jalapeños to your spice preference.
- For a lighter version, substitute heavy cream with half and half.
- Serve with rice or tortillas for a complete meal.
