Ingredients

  • 2 Boneless, skinless chicken breasts
  • 2 tbsp Olive oil
  • 1 Diced onion
  • 2 cloves Minced garlic
  • 1/2 cup Sliced jalapeños
  • 1 cup Chicken broth
  • 1/2 cup Heavy cream
  • 1 cup Shredded cheddar cheese
  • 1 tsp Paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and paprika. Cook chicken for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  2. In the same skillet, add diced onion and sliced jalapeños. Sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour chicken broth into the skillet and bring to a simmer. Stir in heavy cream and cook for 2-3 minutes until sauce thickens slightly.
  4. Stir in shredded cheddar cheese until melted and sauce is smooth and creamy.
  5. Return cooked chicken to the skillet, coating in the creamy jalapeño sauce. Sprinkle fresh chopped cilantro on top.
