Description
A flavorful and creamy Jamaican shrimp rasta pasta dish that combines succulent shrimp with a rich and spicy sauce, served over pasta.

- 2 lbs jumbo shrimp, deveined
- 1 tbsp extra virgin olive oil
- 1 tbsp unsalted butter
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 (16 oz) package rigatoni pasta (or any short-cut pasta)
- 1 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 cups bell peppers, chopped (assorted colors)
- 2 sprigs fresh thyme
- 2 tbsp all-purpose flour
- 1–2 tbsp jerk seasoning (adjust to taste)
- 2 cups heavy cream
- 1 cup chicken or seafood stock (low-sodium)
- 2 tbsp white cooking wine
- 1 cup grated Parmesan cheese
- 1 cup shredded mild cheddar (optional)
- Chopped scallions (for garnish)
Instructions
- Boil pasta according to package instructions. Cook until al dente (about 6-8 minutes), then drain and set aside.
- In a bowl, season shrimp with salt, pepper, paprika, garlic powder, and parsley.
- Heat a medium skillet over medium-high heat. Add olive oil and butter.
- Sauté garlic for 1-2 minutes until fragrant.
- Add shrimp and cook 3-4 minutes per side until pink. Remove and set aside.
- In a large skillet, heat olive oil and sauté garlic for 1-2 minutes.
- Add bell peppers and thyme, cooking for 3-4 minutes until softened.
- Stir in jerk seasoning and flour, then slowly whisk in heavy cream, stock, and white cooking wine.
- Simmer for 3-4 minutes until thickened.
- Stir in Parmesan and cheddar (if using) until melted and creamy.
- Add the cooked pasta and shrimp, stirring to coat. Simmer for 1-2 minutes.
- Remove thyme sprigs, garnish with chopped scallions, and serve immediately.
Notes
- Adjust the amount of jerk seasoning to your spice preference.
- For a lighter version, you can substitute heavy cream with half-and-half.
- Feel free to add other vegetables like spinach or zucchini for extra nutrition.
