- 1 cup heavy cream
- 2 fresh lemons (juice and zest)
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon fresh thyme (chopped)
- 4 garlic cloves (minced)
- 1 cup low-sodium chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat a large skillet over medium-high heat and add olive oil.
- Season chicken thighs with salt and pepper, then place skin-side down in the skillet. Sear for 5-7 minutes until golden brown, then flip.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up the browned bits.
- Lower the heat and stir in heavy cream along with lemon juice and zest. Simmer gently for 3-5 minutes until the sauce thickens.
- Stir in chopped parsley and thyme right before serving.
- Serve warm over rice or alongside roasted vegetables.
