Ingredients

- 1 lb ground chicken or turkey
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the ground chicken or turkey, almond flour, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Form into meatballs.
- In a skillet, heat olive oil over medium heat and cook the meatballs until browned and cooked through. Remove and set aside.
- In the same skillet, add the heavy cream, sun-dried tomatoes, spinach, and Parmesan cheese. Cook until the spinach is wilted and the sauce thickens.
- Add the meatballs back to the skillet and simmer in the sauce for a few minutes.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- These meatballs can be served over zucchini noodles for a complete meal.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
