- 2 cans white beans, drained and rinsed
- 1 cup vegetable broth
- 1 cup spinach, chopped
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in sun-dried tomatoes and cook for 2 minutes.
- Add white beans, vegetable broth, and Italian seasoning; stir to combine.
- Bring to a simmer and cook for 5 minutes.
- Stir in heavy cream and spinach; cook until spinach is wilted.
- Season with salt and pepper to taste.
