- 1 lb ground beef
- 1 red bell pepper, diced
- 8 oz Velveeta cheese, cubed
- 1 cup heavy cream
- 2 teaspoons Cajun seasoning (adjust to taste)
- 2 cloves garlic, minced
- 1 cup shredded mozzarella (optional, for topping)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Bring a medium pot of salted water to a boil. Add penne and cook until al dente. Drain and set aside.
- In a large skillet, brown the ground beef over medium-high heat. Break it up with a wooden spoon as it cooks. Drain excess fat.
- Add minced garlic and diced red bell pepper. Sauté for 3-4 minutes until fragrant and softened.
- Pour in the heavy cream and add cubed Velveeta cheese. Stir until melted and smooth. Season with Cajun spice to your heat preference.
- Toss in the cooked penne pasta. Stir to coat and simmer for 2-3 minutes.
- For a cheesy finish, sprinkle mozzarella on top and broil for 2-3 minutes until golden and bubbly.
- Garnish with chopped parsley and serve hot.
