Ingredients

- 2 medium cucumbers, thinly sliced
- 2 medium beetroots, cooked and thinly sliced or grated
- ½ small red onion, thinly sliced
- ¼ cup fresh dill or parsley, chopped
- 2 tbsp crumbled feta cheese (optional)
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp Dijon mustard (optional)
- 1 tsp honey or maple syrup (optional)
- Salt and black pepper, to taste
Instructions
- Prepare the Vegetables – Wash and slice the cucumbers and beets. If using red onion, slice it thinly.
- Make the Dressing – In a small bowl, whisk together olive oil, vinegar or lemon juice, Dijon mustard (if using), honey, salt, and black pepper.
- Assemble the Salad – In a large bowl, combine cucumbers, beets, and red onion. Drizzle the dressing over and toss gently to coat.
- Garnish and Serve – Sprinkle with fresh dill or parsley and crumbled feta. Serve immediately for the best flavor and freshness.
Notes
- Adjust the seasoning to taste.
- For a vegan option, omit the feta cheese.
- This salad is best served fresh but can be refrigerated for a short time.
