- 1 cup almond flour
- 3 tablespoons cocoa powder

- 3 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy cream
- 4 ounces white chocolate, chopped
- 6 Oreo cookies, finely crushed
Instructions
- Preheat the oven to 300°F (150°C) and line 2 baking sheets with parchment paper.
- In a food processor, combine powdered sugar, almond flour, cocoa powder, and salt. Process until finely ground.
- Sift the mixture into a large bowl, discarding any large pieces.
- In a separate bowl, beat egg whites on medium speed until frothy.
- Gradually add granulated sugar, increase speed to high, and beat until stiff, glossy peaks form.
- Fold the dry ingredients into the meringue in three parts, gently turning the batter until smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip.
- Pipe small rounds onto the prepared baking sheets, leaving space between each macaron.
- Tap the baking sheets on the counter to release air bubbles.
- Let the macarons sit at room temperature until a skin forms, about 30 minutes.
- Bake for 15-18 minutes, or until the feet are well-risen and the tops are firm.
- Cool completely on the baking sheets before removing.
- For the filling, heat heavy cream in a small saucepan until simmering.
- Pour over the chopped white chocolate in a bowl and let sit for 1-2 minutes.
- Stir until smooth, then fold in the crushed Oreo cookies.
- Let the ganache cool until thickened and pipeable.
- Pair the macaron shells and pipe the Oreo ganache onto one shell, sandwich with the other.
- Refrigerate the macarons for at least 24 hours to mature before serving.
