Description

A delightful twist on the classic Caesar sandwich featuring crispy chicken, fresh romaine, and a homemade Caesar dressing all served on flaky croissants.


Ingredients

  • 4 croissants, toasted
  • 3 cups romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, shaved
  • Canola oil, for frying
  • 45 boneless, skinless chicken thighs
  • 1 large egg
  • 2 tbsp flour
  • 3 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic, minced or paste
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg (for dressing)
  • 1/2 cup olive oil
  • 1/2 cup Parmesan cheese, shaved (for dressing)
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tbsp garlic, minced (for dressing)
  • 1 tsp Dijon mustard
  • 1 tsp red wine vinegar
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp black pepper (for dressing)
  • Salt, to taste (for dressing)
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt (for breadcrumbs)

Instructions

  1. In a large bowl, mix all marinade ingredients.
  2. Coat chicken in the mixture and let marinate for at least 20 minutes.
  3. Melt butter in a pan over medium-low heat.
  4. Add panko and a pinch of salt, stirring continuously until golden brown (3-4 minutes). Set aside.
  5. In a blender or food processor, blend all dressing ingredients until smooth.
  6. Adjust salt to taste and set aside.
  7. Heat canola oil in a pot to 350°F (175°C).
  8. Fry marinated chicken until golden brown and cooked through (8-10 minutes).
  9. Transfer to a wire rack to drain.
  10. In a bowl, mix romaine lettuce, Caesar dressing, toasted panko, and Parmesan.
  11. Spread Caesar dressing on the bottom halves of the toasted croissants.

Notes

  • Ensure the oil temperature is correct for frying to achieve crispy chicken.
  • You can use other types of bread if croissants are not available.
  • Adjust the seasoning in the Caesar dressing to your taste.
