- 1 cup shredded cheddar cheese

- 0.25 cup jalapeños, thinly sliced
- Ranch dressing or voodoo sauce, for drizzling
Instructions
- Set the oven to 425°F (220°C) and prepare a large baking sheet with parchment paper.
- Rinse and peel the potatoes, then cut into evenly sized fries or wedges.
- Place cut potatoes in a bowl of cold water and soak for 30 minutes. Drain and pat dry thoroughly with paper towels.
- Toss the dried potatoes with olive oil in a large bowl until evenly coated.
- In a separate small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Sprinkle the seasoning blend over the potatoes and toss well to coat all fries evenly.
- Spread the seasoned fries on the prepared baking sheet in a single, even layer.
- Place the baking sheet on the center rack and bake for 30-35 minutes, flipping the fries halfway through, until golden and crisp on all sides.
- Remove the fries from the oven and immediately scatter shredded cheddar cheese over the hot fries, allowing it to begin melting.
- Top with crumbled bacon, chopped green onions, and sliced jalapeños in an even layer.
- Return the fries to the oven for 5 minutes, just until the cheese is fully melted and toppings are warmed.
- Drizzle warm fries generously with ranch dressing or voodoo sauce just before serving.
