Description

  • 1 cup shredded cheddar cheese

  • 0.5 cup green onions, chopped
  • 0.25 cup jalapeños, thinly sliced
  • Ranch dressing or voodoo sauce, for drizzling

Instructions

  1. Set the oven to 425°F (220°C) and prepare a large baking sheet with parchment paper.
  2. Rinse and peel the potatoes, then cut into evenly sized fries or wedges.
  3. Place cut potatoes in a bowl of cold water and soak for 30 minutes. Drain and pat dry thoroughly with paper towels.
  4. Toss the dried potatoes with olive oil in a large bowl until evenly coated.
  5. In a separate small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Sprinkle the seasoning blend over the potatoes and toss well to coat all fries evenly.
  6. Spread the seasoned fries on the prepared baking sheet in a single, even layer.
  7. Place the baking sheet on the center rack and bake for 30-35 minutes, flipping the fries halfway through, until golden and crisp on all sides.
  8. Remove the fries from the oven and immediately scatter shredded cheddar cheese over the hot fries, allowing it to begin melting.
  9. Top with crumbled bacon, chopped green onions, and sliced jalapeños in an even layer.
  10. Return the fries to the oven for 5 minutes, just until the cheese is fully melted and toppings are warmed.
  11. Drizzle warm fries generously with ranch dressing or voodoo sauce just before serving.
