- 3 cups cucumber, thinly sliced
- ½ small red onion, thinly sliced
- ¾ cup crumbled feta cheese
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Start by washing and slicing your cucumbers thinly.
- Slice the red onion as thin as possible.
- In a small bowl or jar, whisk together the olive oil, lemon juice, garlic powder, a pinch of salt, and a few cracks of black pepper.
- In a large mixing bowl, combine the cucumber, onion, chopped dill, and feta. Drizzle the dressing over the top and gently toss everything together.
- If you have time, chill the salad in the fridge for 15–30 minutes before serving.
Notes
- Use a mandoline for thin onion slices if available.
- Soaking onion slices in cold water can reduce their sharpness.
- Chilling the salad enhances the flavors and gives a crisp texture to the cucumbers.
