- ½ small red onion, thinly sliced
- ¾ cup crumbled feta cheese
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice

- Salt and pepper to taste
Instructions
- Start by washing and slicing your cucumbers thinly. If using standard cucumbers, peeling and deseeding can help reduce bitterness.
- Slice the red onion as thin as possible. Soak in cold water for 10 minutes if strong flavor is a concern.
- In a small bowl or jar, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper.
- In a large mixing bowl, combine the cucumber, onion, dill, and feta. Drizzle the dressing over and gently toss together.
- If you have time, chill the salad in the fridge for 15–30 minutes before serving.

- For added crunch, consider using thicker cucumber slices.
- English cucumbers do not require peeling.
- For a milder onion flavor, soak slices in water.
- Baking the feta can be an alternative if you prefer a different texture.
