Description

  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup plain yogurt
  • ½ cup strong brewed coffee (Arabic-style or regular)
  • ½ cup chopped soft Medjool dates
  • For the Ganache:
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Pinch of salt
  • Optional Garnish:
  • Crushed pistachios
  • Edible gold leaf
  • Chopped dates
  • Rose petals (food grade)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and cardamom. Set aside.
  3. In another bowl, whisk together the oil, granulated sugar, brown sugar, eggs, vanilla, and yogurt until smooth and creamy.
  4. Add the dry mixture to the wet in batches, mixing gently. Slowly pour in the brewed coffee while stirring, then fold in the chopped dates.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick comes out with moist crumbs. Let the cake cool completely in the pan before transferring to a wire rack.
  6. Heat cream in a small saucepan until just steaming. Pour over the chocolate chips in a bowl and let sit for 2 minutes. Stir until smooth. Add a pinch of salt to deepen the flavor.
  7. Pour the ganache over the cooled cake, letting it drip down the sides. Decorate with crushed pistachios, chopped dates, and edible gold leaf for a true Dubai finish.
