Ingredients
Scale
- 1 ¾ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cardamom
- ¾ cup vegetable oil
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup plain yogurt
- ½ cup strong brewed coffee (Arabic-style or regular)
- ½ cup chopped soft Medjool dates
- For the Ganache:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- Pinch of salt
- Optional Garnish:
- Crushed pistachios
- Edible gold leaf
- Chopped dates
- Rose petals (food grade)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and cardamom. Set aside.
- In another bowl, whisk together the oil, granulated sugar, brown sugar, eggs, vanilla, and yogurt until smooth and creamy.
- Add the dry mixture to the wet in batches, mixing gently. Slowly pour in the brewed coffee while stirring, then fold in the chopped dates.
- Pour the batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick comes out with moist crumbs. Let the cake cool completely in the pan before transferring to a wire rack.
- Heat cream in a small saucepan until just steaming. Pour over the chocolate chips in a bowl and let sit for 2 minutes. Stir until smooth. Add a pinch of salt to deepen the flavor.
- Pour the ganache over the cooled cake, letting it drip down the sides. Decorate with crushed pistachios, chopped dates, and edible gold leaf for a true Dubai finish.
Notes
- Ensure you use good quality cocoa powder for a richer flavor.
- Let the ganache cool slightly before pouring over the cake for a thicker layer.
- This cake can be stored in an airtight container for up to 3 days.
