Description

Dublin Coddle is a traditional Irish stew made with sausages,turkey bacon, potatoes, and vegetables, creating a hearty and comforting meal.


Ingredients

  • 4 pork sausages
  • 6 slices of back turkey bacon, chopped
  • 1 large onion, sliced
  • 4 large potatoes, peeled and sliced
  • 2 large carrots, peeled and sliced
  • 3 cups chicken broth
  • 1/2 cup white wine (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the sausages over medium heat until browned. Remove and set aside.
  2. Add the chopped bacon to the pot and cook until crispy.
  3. Add the sliced onions and garlic to the pot, cooking for about 2 minutes, until softened.
  4. Layer the sliced potatoes and carrots in the pot with the turkey bacon and onions.
  5. Pour the chicken broth and white wine (if using) over the vegetables.
  6. Season with thyme, salt, and pepper.
  7. Add the sausages back into the pot, covering everything with the broth.
  8. Bring to a boil, then reduce heat and simmer for 1 hour, or until the vegetables are tender and the flavors have melded.
  9. Garnish with fresh parsley and serve hot.

  • Leftovers can be stored in the refrigerator for a couple of days.
