Description

A delicious and easy-to-make Buffalo Chicken Bowl featuring tender buffalo chicken served over a base of your choice, topped with fresh veggies and dressing.


Ingredients

  • 1 lb boneless skinless chicken breasts or thighs
  • ½ cup buffalo sauce store-bought or homemade
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice or white rice
  • 2 cups cauliflower rice
  • 4 cups chopped romaine or spinach
  • 1 avocado diced
  • 1 cup shredded carrots
  • 1 cup cherry tomatoes halved
  • ½ cup diced celery
  • ¼ cup diced red onion
  • ¼ cup crumbled blue cheese or shredded cheddar
  • ¼ cup ranch or blue cheese dressing or Greek yogurt dressing
  • Fresh cilantro or green onions optional, for garnish

Instructions

  1. Cut the chicken into bite-sized pieces or keep whole if you prefer slices. Season with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for about 6–8 minutes until golden brown and fully cooked through (internal temp 165°F). Turn off heat, then toss the cooked chicken with buffalo sauce until evenly coated.
  3. While the chicken cooks, prepare your chosen base (rice, cauliflower rice, or greens). Warm rice or cauliflower rice as needed. If using greens, rinse and dry thoroughly.
  4. Dice avocado, slice cherry tomatoes, shred carrots, chop celery, and dice red onion. Crumble blue cheese or shred cheddar.
  5. Add your base to each bowl (about ½ cup cooked rice or 1 cup greens per bowl). Top with buffalo chicken. Add veggies and toppings of choice. Drizzle with dressing. Garnish with cilantro or green onions if desired.
  6. Serve immediately, or store in meal prep containers with dressing on the side.
