A quick and flavorful chicken soup inspired by Thai cuisine, featuring coconut milk and fresh vegetables.


Ingredients

  • 34 boneless skinless chicken breasts
  • 3 cloves fresh garlic
  • 1-inch piece of fresh ginger
  • 1 cup coconut milk
  • 4 cups low-sodium chicken broth
  • Juice of 1 lime
  • Bell peppers and carrots (to taste)
  • Low-sodium soy sauce

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic and ginger.
  2. Heat oil in a large pot over medium heat. Sauté garlic and ginger until fragrant (about 1 minute).
  3. Add chicken pieces and cook until no longer pink (about 5 minutes).
  4. Pour in chicken broth and coconut milk, stirring well.
  5. Add bell peppers and carrots; simmer for about 10 minutes until tender.
  6. Remove from heat; stir in lime juice and soy sauce before serving.

Notes

  • Adjust the types and amounts of vegetables based on preference.
  • Can add chili for spice, if desired.
