Description

A delicious and easy-to-make casserole version of the classic Eggs Benedict, perfect for brunch.


Ingredients

  • 1 pound Canadian bacon, diced
  • 6 English muffins, split and cut into 1-inch pieces
  • 8 large eggs
  • 2 cups whole milk
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • 3 teaspoons chopped fresh parsley, for garnish
  • ½ cup hollandaise sauce (store-bought or homemade)

Instructions

  1. Grease a 9×13 inch baking dish with non-stick cooking spray and set aside.
  2. Spread half of the diced Canadian bacon evenly in the bottom of the prepared baking dish.
  3. Scatter half of the English muffin pieces over the Canadian bacon layer.
  4. Repeat the layers with the remaining Canadian bacon and English muffin pieces.
  5. In a large mixing bowl, whisk together the eggs, milk, onion powder, salt, garlic powder, and black pepper.
  6. Pour the egg mixture evenly over the layered Canadian bacon and English muffin pieces in the baking dish.
  7. Cover the baking dish with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
  8. Preheat your oven to 375°F (190°C).
  9. Remove plastic wrap from the baking dish and sprinkle the top with paprika.
  10. Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden.
  11. Warm the hollandaise sauce according to package or recipe instructions.
  12. Remove the casserole from the oven and let it cool for a few minutes.
  13. Drizzle the warm hollandaise sauce over the top of the casserole and garnish with fresh parsley.
  14. Serve hot and enjoy!
