Description

A delicious and hearty nacho recipe loaded with seasoned ground beef, creamy refried beans, and topped with melted cheese and fresh vegetables.


Ingredients

  • 1 lb ground beef
  • 1/2 yellow onion, diced
  • 2 packages (16 oz each) sturdy tortilla chips
  • 1 can refried beans
  • 16 oz shredded cheese (cheddar and Monterey Jack mix)
  • 3 Roma tomatoes, diced
  • 23 green onions, sliced
  • 1 packet taco seasoning or homemade blend: 1 tsp cumin, 1 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp paprika
  • 3/4 cup water

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C).
  2. Cook the beef: In a skillet over medium-high heat, brown the ground beef with diced onion for about 8 minutes. Drain excess fat.
  3. Season the beef: Return the beef to the skillet, sprinkle with taco seasoning, and add 3/4 cup of water. Simmer on low until most of the liquid evaporates, about 5 minutes.
  4. Prepare the baking sheets: Line two baking sheets with parchment paper. Spread a generous layer of tortilla chips on each sheet.
  5. Add the beans: Dollop refried beans across the chips, using half the can for each sheet.
  6. Layer the beef: Divide the seasoned ground beef between the two trays, distributing evenly over the chips.
  7. Top with cheese: Sprinkle the shredded cheese over the beef and chips.
  8. Bake: Place baking sheets in the oven and bake for 15 minutes, until cheese is melted and bubbly.
  9. Add fresh toppings: Remove from the oven and immediately top with diced tomatoes and sliced green onions.
  10. Serve: Serve hot and fresh, and enjoy!

Notes

  • Feel free to customize the toppings with jalapeños, olives, or sour cream.
  • Leftover nachos can be stored in the refrigerator and reheated later.
