Description

Ingredients

  • 12 large jalapeños, halved lengthwise and seeds removed
  • 1/2 pound (225 g) shrimp, peeled, deveined, and finely chopped
  • 4 ounces (115 g) cream cheese, softened
  • 1/2 cup (50 g) shredded cheddar cheese
  • 1/4 cup (30 g) shredded mozzarella cheese
  • 1 tablespoon Cajun seasoning (or to taste)
  • 1 clove garlic, minced
  • 1 tablespoon green onions, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Cut the jalapeños in half lengthwise and scoop out the seeds and membranes with a small spoon to create room for the filling.
  3. Heat olive oil in a skillet over medium heat. Add the chopped shrimp, Cajun seasoning, and minced garlic. Cook for 2–3 minutes, or until the shrimp is just cooked through. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked shrimp, cream cheese, cheddar cheese, mozzarella cheese, and green onions (if using). Mix until well blended. Taste and adjust seasoning with salt and black pepper, if needed.
  5. Spoon the shrimp and cheese mixture into each jalapeño half, pressing it down gently to fill.
  6. Arrange the stuffed jalapeños on the prepared baking sheet. Bake for 15–20 minutes, or until the cheese is melted and the jalapeños are tender.
  7. Sprinkle with chopped parsley or green onions and a touch of Parmesan, if desired. Serve warm.

  • Adjust the level of Cajun seasoning based on your spice preference.
  • For added flavor, broil the jalapeños for an additional 2-3 minutes after baking.
