Description

Flourless Pumpkin Muffins are a guilt-free, delicious treat that combines the flavors of pumpkin and spices without any flour. Perfect for a healthier snack or breakfast option.


Ingredients

  • 1 cup almond meal or almond flour (120g)
  • 3 tbsp sugar or granulated sugar free sweetener
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon or pumpkin pie spice
  • 1/3 cup pumpkin puree
  • 1 egg or flax egg
  • optional handful mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a mini muffin tin well.
  3. Stir together the dry ingredients (almond meal, sugar, baking powder, salt, and cinnamon).
  4. Whisk in the wet ingredients (pumpkin puree and egg or flax egg).
  5. Divide the batter among the mini muffin cups.
  6. Bake for 10 minutes on the center rack (or 15 minutes for large muffins).
  7. Remove from the oven and let cool; they will continue to firm up during this time.
  8. Carefully run a knife around the sides of each muffin to pop them out.
